Le telefonate sono iniziate già la settimana scorsa: ” stiamo da noi?” “no, andiamo da Jennifer!” ” ma dai! facciamo così, andiamo da Cinzia che almeno si mangia bene, o si vince o si perde!
Ed è così che stasera siamo tutti qui – il gruppo degli amici più stretti – ad aspettare i risultati delle elezioni del Presidente, avendo trasformato una serata di attesa in una occasione di compagnia, buona tavola e opinioni diverse mitigate da pietanze deliziose e sgranocchiamenti appetitosi…..
Due ricette veloci prima di ritornare a guardare la tv…..
RISOTTO AGLI SPINACI E GRANA CON CILIEGINI AL FORNO ( 4 )
300 gr riso Arborio – 400 gr spinaci – 50 gr burro – 6 cucchiai olio d’oliva – 1 cipolla – 200 gr ciliegini – 200 gr formaggio grana grattugiato – 2 lt brodo, anche vegetale o di dado – 1 bicchiere vino bianco – sale e pepe
Per prima cosa lavate e asciugate i ciliegini, poi ungeteli di olio e metteteli al forno (200°) finchè saranno appassiti e ben cotti, circa una ventina di minuti.
Preparate le cialdine di grana mettendo sul fondo di una padellina un disco di carta forno che abbia la stessa misura del fondo della padella.Su questo mettete un cucchiaio o poco più di grana spandendo il formaggio. Cuocete per pochissimo a fuoco moderato e appena il formaggio tende a sciogliersi formate la cialda e togliete dal fuoco con tutta la carta base, mettendo a a raffreddare.
Lavate bene in molte acque gli spinaci e, dopo averli sgrondati bene, tagliateli grossolanamente. In una pentola per risotti mettete l’olio d’oliva e la cipolla tritata facendo imbiondire.Unite poi il riso e fatelo tostare qualche minuto sfumando poi tutto con il vino bianco. Aggiungete gli spinaci e un paio di mestoli di brodo. Continuate la cottura come un normale risotto per almeno 18 minuti. Appena spento il fuoco aggiungete il burro e mantecate con la metà del formaggio. Servite caldo con una cialdina di grana e con uno o tre pomodorini al forno.
GRISSINI CIOCCOLATO E NOCCIOLE ( 4 )
20 grissini – 200 gr cioccolato fondente a pezzi – 150 gr nocciole tostate tritate ( ma anche mandorle o pistacchi salati o noccioline americane )- 2 cucchiai latte
Fondete a calore moderato il cioccolato con qualche cucchiaio di latte, immergetevi i grissini che poi passerete velocemente nelle nocciole tritate.
Potete farlo con i pretzels salati ( come la foto), ma anche con i crackers o altri biscotti salati, per un assaggio di dolce-salato che vi sorprenderà.

SPINACH RISOTTO with baked tomatoes ( 4 )
1 cup and 1/2 of Arborio rice – 1 lb spinach – 2 tbsp butter – 6 tbsp olive oil – 1 onion – 1/2 lb grape tomatoes – 1/2 lb Parmesan or Grana cheese – 2 quarts vegetable stock – 1 cup white wine – salt and pepper
1) Wash and dry tomatoes. Grease them with some oil, season with salt and pepper, and bake for 20 minutes at 400 F.
2) Make the cheese wafers by placing a round of baking white paper on the bottom of a small frying pan, adding then 1 spoonful or slightly more of Parmesan cheese expanding it on the paper. Cook over moderate heat until cheese melts. Take off together with the paper and let cool on a wire rack. (use half of the cheese)
3) Wash well and pat dry the spinach. Cut them roughly.
4) In a pan place olive oil and diced onion and let it become gold before adding rice. Cook for a couple of minutes and then add the white wine. Add also the spinach, season with salt and pepper, and add 2 ladles of stock. Finish the cooking of the risotto adding more stock by the ladle when it dryes. After about 18 minutes turn the heat off, add the butter and the remaining cheese and mix well. Serve hot with one wafer and some baked tomatoes.

CHOCOLATE,NUTS BREAD STICKS
20 bread sticks – 1/2 lb dark chocolate – 1/2 lb toasted, chopped nuts (hazelnuts,pistachios,almonds, peanuts) – 2 tbsp milk
Melt the chocolate with the milk. Then dip the bread sticks in it and roll them in the chopped nuts.
You can do it with pretzels, or crackers, or any savory cookie, for a sweet/salted bite.
